One cook in, and it does exactly what I expected. Temp goes up? Fan shuts off airflow to coals and the fire dies down. Temp drops too low? Fan kicks on and stokes the fire.Two things I notices, and this most likely has nothing to do with THIS particular stoker, I think (I believe any stoker would have these considerations):1) having the probe in a different area of my grill yielded 30 degree difference from my wireless thermometer (Maverick). I found the PID thinking the smoker was 220 and the maverick was over 250. Moving thie PID sensor right next to the maverick, they were within a degree of each other2) ash. At the end of a 5 hour cook, the temp started to drop and the stoker couldnt stop it. So, I opened the smoker door (WSM) and there was a lot of ash. I shook the ring to drop the ash to the bottom of the bowl (normal on my smoker) and moved some of the coals around. When I finished my cook, I notices ash all over the probes on the cooking rack (couldnt tell on the ribs I was making, but Im sure there was ash on them too). Like I said, I think ANY stoker would have this issue, not just this one. I will try using lump instead of briquettes (less ash) on my next cook to see if that makes a differenceOverall, this PID did a fantastic job of holding temps exactly where I wanted them to be. Any challenges seem to be user error
